Paleo Pumpkin Chocolate Chip Muffins


  • 1/2 cup pumpkin puree
  • 2 tablespoons maple syrup (or honey)
  • 1/4 cup olive oil
  • 3 eggs
  • 1 teaspoon vanilla
  • 1/4 cup coconut flour
  • 1/2 cup dairy-free chocolate chips (get them here)
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • pinch of salt
  • Instructions

    1. Pre-heat your oven to 350 and line a muffin tin with paper liners.
    2. Stir together the pumpkin, maple syrup (or honey), grapeseed oil, eggs, and vanilla in mixing bowl until well combined.
    3. Add the coconut flour, cinnamon, baking soda, baking powder, and salt to your wet ingredients then mix well.
    4. Scoop into paper liners and bake for 20-30 minutes, until a toothpick comes out clean.
